Yummy and healthy peanut butter blondies!

My daughter and I had a blast making these last night and they taste delicious! I would have taken pictures but the two of us were a mess. My daughter is only 20 months old so following directions does not always go according to plan!

So here are the ingredients:
1/2 cup sweet-potato baby food(stage 1 or 2)
1/2 cup carrot baby food (stage 1 or 2)
3/4 cup creamy peanut butter
2 tsps vanilla extract
4 egg whites
1scoop vanilla egg white protein powder (find at whole foods)
1/2 tsp salt
3/4 cup oat bran
1 cup all-purpose unbleached flour
1/2 cup peanut butter chips or chocolate (optional)

1/4 cup brown sugar
2 tablespoons butter

Melt the butter and sugar over medium/low heat together and then set aside to cool

Preheat oven to 325 degrees F and spray a 9 by 13 inch pan with cooking spray

Whisk together the first 7 ingredients. Add the butter mixture and whisk. Then add the oat bran and flour, and mix until just combined. Fold in chips if using and then pour into the baking pan.

Bake for 30 mins or until tooth pick comes out clean.


And that is it. It is great for kids because they can keep pouring and whisking, without having to worry about multiple bowls! I hope you all enjoy it with a scoop of ice cream on these hot summer days!
